冬季的蠔特別肥美,春節期間更是吃蠔豉的好時機。蠔豉所含的蛋白質有多種優良氨基酸,這些氨基酸有解毒作用,可以除去體內的有毒物質,降低血液中膽固醇的濃度,因此可預防動脈粥樣硬化。
蠔豉還含有一般食物所缺少的維生素B12,B12中的鈷元素是預防惡性貧血的主要物質,因此蠔豉具有活血補血功能。蠔豉所含的牛黃酸有明顯保肝利胆作用;所含的糖元對促進胎兒生長發育,防止孕婦貧血,以及恢復體力均有益處。
購買蠔豉要揀色澤鮮明、肉厚乾身、氣味香濃者為佳。買回來後要放冰格存放,或將蠔豉浸軟後,加紹酒、薑汁,隔水蒸2小時,待冷,分包存放冰格,隨時取用。
「蠔豉粥」功能降火安神、滋陰生津。對體質虛弱小兒、陰虛煩燥、心悸失眠、懷孕貧血、更年期綜合症、高血壓、高血脂人士均有裨益。
用料:
蠔豉4兩
白米2兩
薑絲,葱花及調味適量
做法:
蠔豉浸發及蒸好
白米洗淨,用少許油、鹽略醃
將水煮滾,加入白米及蠔豉煮成濃稠適度的粥,加入薑絲,葱花及調味,滾片刻即成
~ 小貼士:蠔豉要先隔水蒸2小時再燘煮,口感才好。本品又是補鈣佳品,骨質疏鬆者可常服此粥。但脾胃虛寒,便溏者不宜多食。
Hello Monica, this is in regards to the 蠔豉粥. I had recently brought a bag of cooked oyster, product of Japan. It was the only one I can locate from Chinese markets I shopped. It costed $20 for only 10 oz. As you mention they are 色澤鮮明, 肉厚乾身, 氣味香濃, though. According to the 用料 indicated, it’s too expensive for regular use. Would you advise how often to take the 蠔豉粥 in order to be benefited from it? And, any idea where can I find some good products which wouldn’t cost a hand or leg? Thank you,

Hum! I think your 蠔豉粥 should be very tasty. Well! Good 蠔豉 is not cheap. I’d rather purchase it in good quality. Also, you don’t need to put a lot to make 蠔豉粥. For me, I only put 8-10 pieces small 蠔豉 or approx 5 pcs big 蠔豉. Do some shopping in 參茸行, you may find it in lower price or on sales. Enjoy!
